Hi Mike,

Finally got the to the new beef after a long delay because of needing to empty the freezer and get the house fumigated.

I had cooked some ground beef and it was good, but tonight we had our first non ground, a T-bone steak and it was great!!

We both loved it.

We stayed with friends for four nights while our house was being fumigated and brought the one remaining cross rib roast to their house to share and it was a great hit. They didn't want us to take the leftovers home :-)

Hi Sally,

We just tried the first of your beef. WOW! So delicious in every way! I made a pot roast. Browned the chuck after marinating it for a few hours in red wine, added your tomatoes that I had previously pureed, sauteed onions, porcini mushrooms, thyme, bay leaf, S & P, and the wine marinade. Let it braise for almost three hours. The house smelled divine. It was a huge hit. We awoke the next morning and both of us independently thought about having it again for breakfast.

Thanks to you and Mike for all of your hard work and meticulous care that goes into your products. Your extra efforts do not go unnoticed. We appreciate you tremendously and feel so fortunate that our paths have crossed. Thank you for being you.

Dear Mike,
I wanted to let you know that my second order of beef was excellent! I love the idea of eating natural grassfed beef and it is amazingly delicious. I know the harvest is over but would like to know when you will be harvesting in 2009. I have friends interested as well because they got to sample Chileno Beef and they are sold!
I also have a question, do you know of a pork resource? Or should I contact Vicki at Ibleto's? We want to get some good bacon, pork loin and tenderloin.
We love your product and will continue to order as long as you and Sally do this.

I just wanted to say thank you for the most delicious beef I've ever consumed! This year was the first year that we ordered beef directly from a ranch and we were not disappointed. We have just one more roast that we will use up this weekend (which will be somewhat sad).

Regardless, I wanted to let you know that my fiance, friends, family, and I all loved your beef, and that we look forward to ordering more for this coming Spring.

We picked up our "quarter split" at Ibletto's this week and were pleasantly surprised by your generosity; thank you! We were not surprised by the quality, however, each if us ate every last bite of our steak last night. Our 4 year old stole bites from his 3 year old's plate throught out the dinner- great consternation ensued!

We got your letter. I will be doing bills within the next couple of days and will get a check out to you for another split quarter. We would probably like a fairly late date. What are the choices? ... We have not eaten much meat in the past, but since getting last year's split quarter, we have been revisiting old recipes and inventing new...I used your beef to feed albondigas en chipotle quemado (meatballs in a chipotle chile sauce), chile colorado, and picadillo to 80 people at a party last December...they all loved it...and our friend's very very old dog has been delighted with the extravagance of an occasional soup bone...he sleeps with them in his paws.
